Taste of Marwar

Local Cuisine

Jodhpur’s culinary heritage is rich, spicy, and unforgettable. Here are the iconic dishes you must try during your visit.

Mirchi Bada

Jodhpur’s iconic street snack — a large green chilli stuffed with a spiced potato filling, dipped in chickpea-flour batter, and deep-fried golden.

Mawa Kachori

A sweet kachori filled with dried fruits and reduced milk (mawa), dipped in sugar syrup. A specialty of Jodhpur’s centuries-old sweet shops.

Dal Baati Churma

Rajasthan’s quintessential meal — baked wheat balls (baati) served with five-lentil dal and a sweet crumbled wheat dessert (churma).

Pyaaz Kachori

Crisp, flaky kachoris stuffed with a tangy, fiery onion masala. Best eaten hot with mint and tamarind chutneys at a busy bazaar stall.

Ker Sangri

A traditional desert vegetable preparation using sun-dried beans and berries from the Thar — rustic, tangy, and uniquely Marwari.
